Once you have access to the layout pane of an iBook, select the section layout as shown in the picture below. Some of the changes that may be made to the section layout are similar to those described in details in modifying chapter layout.  .
In the example below the title was changed and a square shape was inserted in the middle of the page.  .
The shape is expanded all over the page.  .
Use "Arrange" in the menu to "Send to Back" the shape which will be the background of the page.  .
